German Chocolate Layer Cake 4 oz. German sweet chocolate, grated 2 cups flour 3/4 cup sugar 2 tsp. baking powder 1 tsp. baking soda 1 stick butter, softened 2 tsp. vanilla 3 eggs, separated 1 cup buttermilk Mix together butter and sugar, add egg yolks 1 at a time, add vanilla. sift flour, baking powder, baking soda, and add to mixture, alternate with buttermilk, stir in grated chocolate. Beat egg whites until foamy and add to mixture. Place equal amounts into three 8 inch round cake pans that are lightly greased and floured. Bake at 350 degrees for 25 minutes. Cool before frosting. Frosting 1 small can 5 oz. evaporated milk 1/2 cup sugar 1 cup flaked coconut 1/2 cup pecans, chopped 1 egg 1/4 cup butter, softened Combine all ingredients together and mix well spread on all three layers of cooled cake and place one layer over another. You may also use store bought German chocolate frosting if you wish to save time.
