German Potato Salad 8 medium red potatoes, washed and sliced but not peeled 3 oz. real bacon bits 1 medium onion, chopped 1/4 cup sugar 1/2 cup apple cider vinegar 3 Tbsp. flour 1 cup water 1/4 cup oil 3 hard boiled eggs, chopped 1/2 cup celery, chopped salt and pepper to taste Cook potatoes in boiling water until just tender, about 15-20 minutes, drain. Heat oil in large pan, place onion and celery and cook until tender, add sugar, salt, pepper, flour, water and vinegar. Cook until thickened, add bacon bits and stir. Place potatoes in sauce and stir and heat thoroughly, add eggs and stir. Serve warm.
